I bought this book four times because my daughter just started attending the school that Bob Foulkes writes about in this book. It is a well written account of this part of his life and an insightful peak into our daughters experience. I gave a copy to her, although I doubt she will have time to read it. I also gave a copy to her grandmother and father. We have all had fun discussing it.
I appreciate Bob's take on what is important in life and I enjoyed tagging along on his adventures, in fact I was sorry the book ended.
I would love to know what he has been doing since.

Bob Foulkes claims to be the oldest graduate of PICA, having graduated in 2009 at 60. I am the oldest graduate of PICA. I graduated from PICA in March 2005 at age 70 and spent the next several years working as a chef in resorts, dude ranches, and national parks in the western US To my knowledge, Foulkes never worked as a chef after graduating - he is a pretender. "Adventures for Knives" is for all us chef wannabes; those of us who wonder what it would be like to have the skills and techniques to produce extraordinary meals, dishes that would rival those of our particular culinary hero. Foulkes put his money and life into answering that question.

Foulkes learned to love cooking and food in his mother's kitchen. After moving to Vancouver and discovering the joys of its outdoor way of life, he was confronted with the reality of retirement. What do I do now?

He quotes from Julia Child's "My Life in France," when Paul Child posed a similar question to her. What do you like to do? "Eat!" His goal was not to be a chef or earn a living in a professional kitchen or as a caterer. He wanted to learn how to make great meals and was willing to pay more than $15,000 to the Pacific Institute for Culinary Arts for the privilege.

"Adventures with Knives" is a fun read. You'll come away with some great recipes, insights to how a chef puts together a menu and a restaurant's kitchen can time the delivery of six different dishes to the same table at the same time.

By the way, the book reminds me of Bill Buford's Heat An Amateur's Adventures as Kitchen Slave, Line Cook, Pasta-Maker, and Apprentice to a Dante-Quoting Butcher in Tuscany. Foulkes give you recipes.
